INTRODUCTION

Whole milk powder is a type of dairy product that is a powdered version of whole cream milk. To make it, it is first dried using a technique known as spray drying or roller drying. Then it becomes a fine powder. Whole milk powder has numerous applications in the food business. It is used in baking and cooking, as well as an ingredient in processed goods. The nutritious components of whole milk, such as calcium, vitamin D, and proteins, are retained.

To ensure the product quality of whole milk powder, the Bureau of Indian Standards (BIS) has made it mandatory for manufacturers to undergo BIS registration and obtain the BIS ISI mark before selling it in the market. Manufacturers can use the ISI Mark on their products only after obtaining a license from BIS that is granted after BIS registration. The presence of the ISI mark on a product indicates that it complies with BIS's stringent quality standards.

This standard specifies the requirements, sampling methods, and tests for milk powder.

REQUIREMENTS FOR WHOLE MILK POWDER

1.     The material shall be white or white with a greenish tinge or light cream in colour.

2.     It must be free of scorched particles and lumps except those that break up easily under slight pressure.

3.     It must also be free from extraneous material. The flavour of the product or reconstituted milk must be pleasant and clean.

4.     Standardised milk must be free from additives.

5.     All processing and drying should be done to minimise loss of nutritive value, particularly protein quality.

6.     The product shall be manufactured and packed under hygienic conditions as per IS 2491.

7.     All processing equipment should be thoroughly cleaned, and precautions should be taken to avoid infestation.

8.     A laboratory that is adequately equipped and staffed to carry out the various tests specified in the specification in accordance with the methods specified in the standard.

9.     The material must be packed and labelled in accordance with IS 1165. Milk powder must be packed in hermetically sealed, clean, sound containers.

10.  The product may also bear the Standard Mark (ISI Mark).
